how many VCO's could you theoretically run on the system bus before
experencing problems with scale?

It depends upon the buffering of the CV that is connected to the bus. If
A-185-1 or A-185-2 are used I don't expect any problems. As far as I
remember we tested the A-185-x with 4 or 5 VCOs on the same bus.
