Here's an idea about the "many note" thing: Check to make sure the mod wheel is down (or lowered) all the way. This is the first place I look when I hear strange pitches. Then, if you do use a CV pedal, set the pedal to "mod," not volume, in the master settings, and put the pedal down (or lowered) all the way. Then set the pedal for volume. Try the same patches again. One notorious patch that would be affected by the mod wheel is the alto sax program. Give it a shot.
