I've been controlling another synth (a Roland JV-1080) for years
without problems. But the JV-1080 has a much newer implementation of
MIDI than the DX7 would have.

What you need is in depth information on what kinds of midi messages
the DX7 can receive, and if/how you can send those messages with the
VFX. I don't have a DX7 or any documentation for onw, so I can't
begin to tell you what the solutions are.

Except I do remember that controlling external volume, if the DX7
responds to the volume controller (midi controller #7? don't trust my
memory on that one), you should set LOOP=OFF and then adjust the
channel volume from the performance.

(And note that, while the volume slider on the front panel controls
the VFX exclusively, a CV-Pedal on the pedal (not footswitch) input to
the vfx, controls both the volume of the external device and the VFX
itself. IF the VFX pedal input is configured to do volume control,
that is.)

I'll work backwards here...last, the DX7 is not multitimbral, unlike its 4op
cousins which can have two patches going. You could pick up a TX7 module for
$50 or maybe less, have it in combo mode and assign it a different receive
channel than the DX. next, the DX output is mono so pan would be a moot
point. Release (release velocity?) is not available on the DX. Bear in mind
it's a few years older than the vfx so its MIDI capabilities while pretty
good, don't qiute equal the Ensoniq's. and first, the vfx slider in Timbre
mode is controller#70 if I recall rightly while the DX slider is #6 so no
equivalence there.

Here's what the DX has for cotroller response off the top of my pointy head:

#1 modulation
#2 breath controller
#3 pressure (early versions)
#4 foot control
#5 portamento rate
#6 data entry
#7 volume
#64 sustain
#65 portamento on/off
