Each instrument is different and some don't have envelope controls (Attack, decay, etc).

Can you be more specific about what you are doing to call up a
virtual synth?
Also- Garage Band synths are accessible in Logic, so you can use them
the way you always have.
Logic Synths (depending on which one) can be very basic or very
complex sound generators...
