I've only had to do this on a couple of occasions, but I often need to 
switch between 32bit and 64bit depending on the plugins I'm using.

Is there any easy way to toggle between the two load types?

Like a script or something. I tried assigning aliases to different 
formats but that didn't work.

Or what is the scripting language for OSX, there must be an easy way to 
do this.
