Dave, The conversion from RHD to LHD shouldn't be too difficult. I have been stalled on my rebuild/repower Marcos project which includes switching the steering.
The rack can be sourced from a Triumph Spitfire or GT6, and the dash is symmetrical. A mirror-image dash must be copied, and the battery box swapped for the pedal box. Its a little fiberglass work and some brake/clutck piping. The wiring harness "flips" to the other side with very minor modifications. My car has a threaded bung for the heim/rose joint column support on the left side, so no welding is required there. I likely won't swap the wipers to the other side. You may need to change the headlights out if they are specific to RHD cars like mine.
It still all depends which engine / tranny combo you have, and I assume you have a steel chassis?
If you are handy, you might be able to do the swap, otherwise a competent restoration should be able to do the job. What part of the wourld are you in?

I did buy another one that I need to convert to left hand drive, any idea who does conversions

I have a 1980 Triumph TR8 that uses the same Rover 3.5 engine. My engine idles (850-900 rpm) at about 18 -20 psi hot, and runs at 35 to 45 psi hot, depending on rpm. The shop manual engine specs state oil pressure as 28 psi at 2000 rpm hot.
It is easy to alter the oil pressure on these engines by shimming the bypass spring pressure on the oil pump, provided the journal clearances are within spec. This is done by adding a small washer on top[ of the spring. I shimmed my bypass spring to overcome centrifugal forces because I use a higher redline.
This engine is based on the '61 to '63 Buick, and as such, runs reletively low factory oil pressure.
