I've been waiting to find the time and experience to rebuild the chassis on my 69 GT. Only clue I'd have is some years (10+) ago, someone mentioned someone is restoring/rebuilding plywood chassis in the UK and $15k stick in my head. The rest of it is typical fierglass-bodied British car restoration. I'd budget $75K to $100K. As is typical, makes more sense to buy a good one and go from there.
