I had the same thing happen the first time I installed it. Then I  
realized I had to install the profiles separately from the driver ...  
on the distribution CD image, go to the Profiles folder and then open  
the folder with your printer model and inkset name. In there, double- 
click on the file named "InstallXXXX.command", for whatever printer  
XXXX stands for. The Terminal will open and the profiles will be  
installed.

Now you can get to profiles when you restart the application and get  
to the printer dialog again.
