This is the Epson Driver dialog. From here your students will be interested in 2 options in the drop-down menu: Color Matching and Print Settings. In Color Matching, make sure Epson Color Controls are selected. In Print Settings, they should select the options they normally would for the paper they are using.
Page Setup - Roll vs Sheet
Media Type - Manufacturer Dependant
Print Mode - Accuphoto HD (Advanced BW should only be selected if the printer is managing color for grayscale prints)
Color Mode: OFF
Output Resolution - Media Dependant (check with the manufacturer)
I always teach our students to check '16 Bit Output' out of habit.
Also, here is a link to our internal wiki page we use to have instructions on hand to use specific software. This particular page teaches three workflows available in QTR-Print-Tool. Step 12 has a screenshot that applies to the workflow you are asking about.
