It's a very qualified -- yeah you could edit the PPD files before installing the printer.
Naturally if you mess them up things with stop working.
The paper sizes would be the simplest -- just like you do on Windows.
The ink order would probably not work as you thought. You are right about the top line
of the .quad matching the .ppd -- but the effect of both changes would be to cancel each
other out. If you have different ink slots just change the .qidf files or if you only have
.quad files just move the ink sections (the sets of 256 numbers) around.

So let me take this a step further. What I'd also like to do is change the order of the inks in the PPD, because the inks are in non-standard slots in the printer, and obviously I'd also need to change the top line of the quad files to match. So my question about whether the PPD file can be edited on MacOS still holds.
