Hi Matteo, in the beginning you won't do anything wrong with any preconfigured systems by ASys. They simply have experience with what is needed. However if you want a custom system: You could copy an analogue synth which functionality (not sound) you think good. This way you know which modules are needed for a replica of the functions (while you have much more possibilities bcs your one will a modular). To this basic configuration you could add whatever you missed on that particular synth (e.g. the MS10 only had 1 EG while you always needed 2). Definatily you'll need 2 VCOs for certain techniques like cross modulation (i.e. to modulate them one another). However, I've noticed in the past that people who are new to modular synth underrate a module like VCA or even basics like EGs, LFO, but concentrate on sound sources and filter. You should be aware that Mixer and Multiples will help to get more out of a given selection of modules. I think at least 2 EGs and VCAs a must while the rest depends in choice and quantity very much on your personal likings.
