Since that is no longer available (since Apple bought out Emagic to acquire Logic) I've been using MidiQuest, which works very, very well and allows you to MIDI-learn BCF or BCR controls to its sliders and knobs for each instrument. A very worthwhile investment for older hardware gear!
There are many things you can do with regular sysex strings.. if you edit an item in the hardware and observe the sysex sent out during the edit, you can get a handle on some of those. It also has regular NRPN's and RPN's. If you need particular values, check the appendix of the manual, or ask me to look it up for you and I'll do so when I get a free minute.
