The tag the wiper connects to when the pot is rotated fully
counter-clockwise. From the rear of the pot, with the tags up, it is the
left.. The center pin is the wiper.

If the circuit diagram and/or wiring instructions do not specify a ground
connection, then don't add one. In the case of an older board using hte
beginning center end markings (B, C and E) all three would be on the PCB if
needed.

No. The difference between sizes is literally the size. Differences between
colors are, however, significant in some instances.

4000mcd will be WAY too bright. Use a 10k in series with it instead of 1k.
