First thing, I would like to increase the decay time when I turn up the
decay pot to get a longer cymbal sound. Do I change a cap or something? My
second question is about the sustain input. When I patch the square wave
output of my Utility LFO into the sustain input while I am triggering the
trigger input, I get nice open/closed hi-hat sounds. I tried patching a
trigger signal into the trigger input and another trigger signal into the
sustain and now I don't get the nice open/closed hi-hat sounds. Is the
sustain input expecting a gate instead of a trigger? How can I change it to
accept a trigger including a gate?

Either increae the value of the 2u2 electro, or increase the value of the
decay pot to 500k

Yes, it requires a gate signal.

You would need to feed your trigger signal into something that can stretch
the pulse - a 555 wired as a monostable may do it, or perhaps use an ADSR as
a pulse stretcher.
