To make an audio CD out of any MIDI performance, you have to "play" the MIDI file and capture the audio.
I put the word "play" into quotes because this does not have to be real time playback necessarily.
The ideal way to do this is to play back the files on the best acoustic DIsklavier available and capture the audio with microphones. (Obviously that is a real time process and is cumbersome.)
Since you have a GranTouch, you can play back the files on the GranTouch and capture the audio output of the instrument using any recording device. (This is also a real time process.) The most efficient way to do this is to connect the audio outputs of the GranTouch to the audio input of your computer and use any audio recording program to capture the result. Audacity (http://audacity.sourceforge.net/) is a nice open source audio recording program available for various platforms.
There are other solutions to making the audio recordings. For example, you can open a MIDI file in iTunes and use the Convert feature to create an audio file. (This is faster than real time.) However, the piano sound that iTunes uses is not great, and it doesn't know how to respond to incremental pedal data.
There are many companies that sell high-end sample libraries that contain excellent piano samples. You can use them to do a less-than-real-time conversion.
In all likelihood, the real-time process that I mentioned using the GranTouch will yield better results than these sample libraries because the GranTouch understands the incremental pedaling.
