I have recorded MIDI files of my father playing my Disklavier and wanted to 
make audio files of them to put on CD for our family.  It took 3 years 
exploring many options - both hardware and software.  Somewhere I came 
across using sound fonts, which apparently you have your samples.  I believe 
there is software to convert your samples to soundfonts, but it is a slow 
process and not as successful as these new "virtual" pianos.

Virtual instruments are MIDI data going through audio sampled algorithms 
that give you an audio file.  VST files are for Windows based PCs.  Macs 
have their own formats.  I bought an iMac with an intel processor, installed 
Logic Studio and found versions in Universal Binary to make this work.  BTW, 
Logic Studio comes with  the entire library of all the Garage Band sounds. 
Right now I believe it is difficult to get any of this software to work with 
Snow Leopard, Apple's new operating system.

Logic also came with a good sample of pianos.  However, I found that Native 
Instruments Akoustic piano worked for me.  You can download samples from 
their website.  There are several pianos sampled in this software setup.  I 
use the Steingraeber upright for my Dad's files.  You can place the piano in 
a room of your own design and adjust with the "timbre" as well as the 
tuning.  Perhaps using software like this, you might be able to create the 
sound you are looking for.
