in cakewalk use staff view to print the midi file as music- a cheap alternative is print music from the makers of Finale ( about 60 to 90 bucks)
In cakewalk there is an over all setting to up the volume on the whole piece without altering the the expression of the player- Im not in front of cakewalk right now and I cant remeber the exact placement of that setting- I believe it is in tools
