I prefer the editor in Cakewalk. I don't like the rest of the program, but
the SYSEX librarian is so great in it's simplicity. Does exactly what you
want it to without complicating it more than necessary. Don't know if the
SYSEX librarian is included in the version freely available on their
website though...

You could also try MIDI-OX which is a great MIDI utility, and diagnosis
program for PC. Even if you don't end up using it for SYSEX storing, you
can learn a lot about how MIDI works, and what is actually send from your
synths.
