I use a Les Paul Studio with 490-R and 498-T HB pickups into a [] Peavey Stereo Chorus 210 amp. This is a highly personal thing, of course, but I once had that amp (a stereo solid state is not a bad choice for the GSP2101 if your want to exploit the preamp tones with stereo effects, but not add much in the amp department). So I would suggest that you roll off the highs some (it's a bright amp), and bring up the bass (there's not very much thump to that open-back 2x10, at least not with the stock speakers... even then). Back then, I played S/C strat pickups into it, so have more meat than I did--salt to taste. For the future: I eventually moved up to a pretty inexpensive rack amp setup for the GSP2101: a Peavey classic 50/50 rack tube amp (cheap used!) and a couple of no-name 2x12 cabinets. Add a 6U rack and a Furman power conditioner (to power all of that and any DC powered pedals you might have) and yer rawkin' with a nice mobile setup. I don't have that anymore, but I enjoyed it more than the Chorus 210 (which the sister now has). Having said that, I had some cool jams with that amp. One last thing: the EQ will depend on what you play, gigs, jams, or home studio stuff. It will require some experimentation. Chris ps: dang, just when I thought this list was dead. Again.
