Hello,

I have a 2101 Artist that I use along with the Control One 
footcontroller but I'd also like to utilize the capability of using 
an extra external expression pedal and plug it into the jack in the 
control one to assign it volume or whatever i want.

Recommendations for which is the best pedal to use is appreciated!

I use a Roland EV-5 foot pedal.  It was relatively cheap (I paid $65 new in
1994) and it works well.  I bet you could find one on eBay for $25.
