My guess is that is programmed in the firmware. Sadly, like the "send an email to tech support" problem, you can't send a sysex message to turn sysex transmission and reception on.
You'd have to disassemble the code in the firmware, locate the position in the code that establishes that value for the two settings, write a new version of the firmware with those values changed, burn a ROM with the new code. Replace the old ROM with the new one, and test.
If successful, declare victory.
Sadly, none of these are skills I possess...otherwise, I'd have done it already.
While you can still see the screen (or if you already like your patches and never intend to change them), be sure and memorize the number of button presses it takes to get to those settings.
