Regular aftertouch: there's only one aftertouch sensor for the -entire-
keyboard, so any aftertouch you use is applied equally to each key you have
pressed down. E.g. if you're playing two separate notes at once they have to
have the same aftertouch applied to both of them.

Poly aftertouch: each separate key can send its own aftertouch information.
Allows for more expressiveness, depending on what you have programed
aftertouch to do in your patch.
