The MCB2100 stuff does come with an example, called Blinky. There's two versions - one that reads from the ADC to flash the LEDs at a rate controlled by the analogue in, which outputs to UART1 the current ADC reading at regular intervals, and another that doesn't do this but instead uses a timer interrupt.
