I stumbled across this interesting ARM720T with camera interface:

Looks interesting since it has direct camera interface, ethernet, 
compactflash, and I2S audio.
It also has an MMU so you could run linux on it with SDRAM.
Looks like an NDA with Epson is required to get the technical details.
