We're currently porting our PowerNet stack to LPC2106. PowerNet includes multi-threaded Telnet and HTTP/web servers. With an external Ethernet chip it all fits in about 100k of code. I'll report the final figures and performance when it's finished. So the conclusion is that you can use a single chip for this kind of job.
