this is not interrupt response time if I get your answer correctly.
Are you asking whether the capture happens within less than 1 usec,
the answer is depending on your oscillator speed and te setting of
VPBDIV. Assuming VPBDIV = 1 and running at 60 MHz (that is the fastest
you can get), you will have captured the value in approx. 100ns.
