If you have an MMU you port normal Linux AFAIK. It may be possible to run a cut down uClinux in an embedded flash micro; it largely depends what features you are willing to live without. TCP/IP stack necessary for instance ? The other problem is uCLinux is largely arranged to run from RAM. It has RAMDISKs etc. to boot up with.
