Anyone know if I turn off the FIFO (U1FCR bit 0 = 0) will I still get 
interrupts (if enabled) when a single character is received? 

Or does turning off the FIFO disable receiving and transmitting 
altogether?  Thanks, Jeff.

See description of FIFO enable bit in Table 69 of User Manual:
"This bit must be set for proper UART0 operation"

Similarly Table 84 for UART1.
