Dear Matt, I used to have a Farfisa Professional. I donated it to charity years ago. Without the pedal the volume should maximum. The pedal is a potentiometer (5K ohm???) with a 1/4 inch plug. There is a 1K ohm pot at the main output that you can adjust to change the output level. You might have to open the organ up to adjust this, but it might be accessible on the bottom of the organ where the output cable exits.
