Roland S-550 question...

Just got a Roland S-550 a couple of days ago and have (against all odds and Roland's curious manual) actually figured out how to do just about everything I want... except one little thing... how can I make a patch NOT velocity sensitive? Call me old school, but certain sounds (organ, Mellotron, etc.) should NOT respond to key velocity...
