Problems on making a "Blank" patch

Hi all.

Today I finally wanted to make some sort of "Blank Patch" where I 
can start from programming the synth of my MP-7.

I now have a problem where i have searched for the answers hours and 
hours, but I didn't find a solution (only a serious headache).

The problem is the following: I want to route knob 15/O to Pitch and 
16/P to FinePitch, and that's a piece of cake (it's in the manual). 
But now I want that these knobs act like knobs on an analog or VA 
synth; the middle position does nothing, turning counterclockwise 
lowers the pitch, and finally turning clockwise raises the pitch.

Does anyone know how this can be programmed into the synth?

I have no clue at all how to do this... I must say however that this 
is my first real synth. I think it's not a good synth for beginners, 
because of the modular approach to synthesis. Therefore I want to 
make this "Blank Patch" so I can build patches by simply turning the 
knobs. Of course I have to choose instruments in the preset menu, 
but I mean I don't want to program the 6 stage Envelope; a simple 
ADSR is good enough for me. Does someone know good values for 
patchcords amounts to set up a normal ADSR controllable with the 
knobs? When I set the Sustain amount for example to +100 the first 
half of the knob range does nothing, only in the second half you 
hear a difference in the envelope.
