I saw a fellow do something similar on television once, using a hand held
angle grinder/sander. His patterns were intentionally random. He didn't
lift the grinder/sander from the work surface nearly as much as what you
describe. Instead, he made long spiralling swirl marks on the metal. I
think he made a few passes over the piece to make sure it looked "uniformly
random" or whatever.

They said the true beauty of the finish couldn't be captured by television,
and that in person, it took on a 3-D appearance. Also, with every movement
of your head, the pattern seemed to shift around a bit--but that was also
not possible to see on TV. I'm not sure, but I think there was supposed to
be some iridescence happening as well.

Perhaps I should go to the garage and give it a try myself. :)

later,
McLilith
