I'm not doing 5.1 yet.  As opposed to using multiple outs - I'll set 
up a short, multitrack sequence (loop) on my ASR-X sampler and then 
resample a number of takes with a different insert FX or reverb depth 
applied to individual tracks.  It's a quick and dirty way to build up 
a tricked out loop library which can be used in Logic Audio but it 
forces one to premix - not a bad thing for drum tracks at least.

Good advice. I picked up a 2nd hand MOTU 828 (the "mark I" original 
model) recently and it's been a real change trying the 'mixerless' 
approach. On the plus side, everything's ready to go when using Logic 
but if I simply want to rehearse or goof off without running Logic 
then it limits you to only one active input pair at a time. Kind of a 
drag but fixed in the MkII model (for a few hundred dollars more, of 
course!)

My aging, 10+ year Mackie 1202 lacks a pre-fader switch for either 
Aux send which made it kind of a hassle to track with Logic - you 
just have to remember to turn down the gain on the on the right 
channels at the right time ;-) Definitely a feature I would look out 
for if shopping for a new mixer.
