I always recommend simple projects to start out and build on them. When I 
started using AVR's I'd already had quite a bit of experience with PIC's, 
so AVR's weren't that difficult to learn, but I still had some learning to 
do.  The STK-500 is a great tool for this.  Once you've played around with 
the code in the chip they supply that turns on LED's, try writing a 
program to do it via the serial port. 

For more data on different projects you can try, look at the Atmel 
website; there's a lot of application notes, etc. there.  The other 
website to look at is AVRFreaks.
