The way most people simulate this is a slightly slow but clear attack so that as you press the key, if you go quickly, it tends to not exaggerate as much as when you hold the key a brief moment longer. You cannot effectively assign sysex to do anything while playing because of the hiccups/MIDI clogging you'd get.
