I've just bought an iMac.  Can I connect my CZ3000 to it?

Audio wise shouldn't be a problem when having the right cable...
To control the synth and playing notes into the sequencer you need a 
midi interface for your computer...

Of course you can.....You will need an USB-MIDI Interface like the 
EDIROL UM-1ex

I have a midi to USB cable, and iTunes for my Mac G4... will that be enough 
to interface with a CZ-1? What sorts of things would I be able to do with 
that interface?

Well....the USB-Midi Interface is needed for connecting the keyboard 
to the computer. So far so good.
But forget about iTunes....this is not software for MIDI.

You need a basic multitrack sequencer program like Quartz Audio 4.6.
I don't know if Quartz Audio 4.6 works on Mac, but there are certain 
other freeware sequencing programs around.

Help for beginers and the mentioned software is all available at the 
biggest CASIO-Forum around:

join for free and go to the Beginners section and to the software 
section. There you will find everything you need

D'oh.... I meant Garage Band, not iTunes.  I know I've been able to input 
midi before, as I have played some stuff into Garage Band with a midi 
keyboard.  What I don't know is how to get it to control the CZ-1 from midi 
instructions or how to edit the patches within the CZ-1 using this, or if it 
is even capable of doing so.

Man, typos can make you look really stupid sometimes.
