a MIDI keyboard. You have to use the knobs to dial in the desired
sequencer step values, whether the sequence is being used to modulate
pitch, filter, waveshape, etc. You may also want to pay attention to
the "Key Off/Xpose" parameter in each patch.
3) Even if I wanted to program a basic melody into the evolver
without a keyboard, where would I start? I don't see where pitch
changes are programmed for each step.

knobs to set the pitch of each step. As I said in my sequencer post
in the EX5Tech Evolver forum, it's handy to have a keyboard synth
nearby as an audible pitch reference.
