For the pedal, I connected one of the piezo leads
directly to the 1/4" jack, connected the other lead to the pot, then connected
the pot to the 1/4" jack. Could I have done it differently? I don't
know what the pot was (100k or something different), it was just one I had lying
around. I set it about 1/3 from the bottom.
On the TP100 I'm puzzled as well. There are
attenuation DIP switches on the back of the module but to be honest they don't
seem to make any difference. I'm really beginning to wonder if the module
is the whole problem.

I cannot help you with the pads, but when you say you put a pot
"inline", exactly how did you connect it? You need to put the pot
across the pad, with the wiper and one end of the pad going to the
module. Try something like 100k.
Mind you, if the TP100 doesn't work well, with its built in pot, then
I am a bit puzzled.
Maybe it is a polarity problem. Try reversing the connections.
