I'm not sure what the problem is, but from what I remember, "learn mode" is the default setting. But even if it isn't, you can get to input 7, and then rim 7, by toggling input numbers in the voice menu. If you're having trouble bringing up the rim of a cymbal in the menu by hitting it while in learn mode, it might be because hitting the rim often activates the cymbal's main piezo trigger and leaves you there. After making sure that you're in learn mode, try striking the rim of pad 7 gently in a number of places until the voice menu reads "rim 7." Then you should be able to progam it. Also, if you save your user settings, you shouldn't lose them unless you make a permanent change. Make sure that after you create each of your new settings, you press "save" until the process is "complete."
