The printer "assumes" there is the OEM color ink in it.  So, if a neutral
image is sent to it, it'll combine the C, M and Y colors as it assumes is
needed to make a neutral tone.  This works quite well if, and only if, the
B&W inkset was made in a way to be compatible with the Epson driver, like
Eboni/Carbon-6.  The Epson driver ink distribution is not optimal for an
inkset like Eb/C-6 in that it spreads the 2% Y across the entire print,
aside from  the 100% black values, with much less than optimal at the
beginning of the print and too much in the shadows.  However, particularly
with the 1.5 pl drop size, the LC and LM are light enough that the print
will be smooth throughout.  The Epson LM-M and LC-C crossovers are
excellent.  The color to black crossover is less than ideal, but it usually
works OK.

Most current printers do not support a black only mode.  And the few that
do (WorkForce only?) require a special setting in the driver to select that
approach.
