Another possibility is Kodak PhotoCD scans, which I think can be had for about a dollar per exposure, e.g., three rolls of 36-exposure Kodak Supra, developed and scanned onto a single CD for about $115, and shot through any 35 which can be set so that she gets to see the interaction between shutter speed and aperture. I've tried all three speeds of Supra in this mode in a Canon Rebel and been disappointed in the grain in the 800. But you can often get by without a flash, and I think the 800 prints fine at 5 x 7, maybe even 8 x 10.
