Brian, I have a Linoscan 1400 which I believe is identical to the Ultra 2 Saphir. I originally set it up under Windows 98 using the Newcolor 4000 software that came from it. I found the software very confusing and had no idea of exactly what the scanner was doing. I believe that Linocolor's Elite software is available for Mac users with this scanner and I have heard that it is good. You might try to see if you can get a copy of that. The other thing to try is Vuescan. I am just starting with this myself since I switched to Win 2000 and the Newcolor doesn't run under that OS.
