Your answer will be that the cart is designed to quit well before it 
is empty so you won't destroy the print head...it's all built into 
the pricing <g>.

That's only partly meant to be funny. Much as we groan about Epson 
policies etc., one has to admit they deliver a very reliable product. 
In this forum probably more than half use non-epson inks and we know 
what to expect and live with the issues that creates...the other 
99.9% of the world have no idea what to expect other than 
click "print" and a print comes out (usually without and idea about 
profiling or that paper choice even matters).

We're so involved with our printing that we make the mistake of 
thinking we must be the target market that Epson cares about...
