Hello Ned, I'm still new to digital printing myself and was feeling just as you do now. I was lucky to have a background in black and white film photography coming into this digital stuff. Also one particular website headed me in the direction I preferred. Black and White. The trouble with black and white is that not many if any printer on the market is set up to do this simple (?) task. Her is the website : http://www.cjcom.net/digiprnarts.htm maintained by Clayton Jones who posts here from time to time. Another approach to Black and White printing is MIS associates and Piezography.com. For color printing I'll have to leave you to your own devices I'm afraid.
