Another choice for film in your Speed Graphic, if it fits (big if), is 3.25x4.25 pack film from Polaroid. Polaroid makes some really interesting pro emulsions, including its 665 film, which gives both a positive and a negative for each exposure. The negatives get high marks from many photographers, although I gather it's difficult to expose for a good negative and a good instant print at the same time. You can fit the packs to 120 roll film cameras as well as to 4x5 LF sheet-film cameras, so I'm betting you could load it onto your Speed Graphic and explore -- waaaaaay cool.
