Chip, I would say it is merely impractical but that depends upon your individual situation and needs. No mechanical reasons you couldn't do it. The only potential problem would be switching with a gray scale ink that was not chemically compatible with the Epson UC inks and creating clogging problems. People have done switched like this in the past with the 1160 and 1280, and my impression is that most gave up on it.
