My guess since Preview is a unix based program it can pass the settings to gimp-print. If you problem is trying to print custom sizes from PS 7 the problem (again my guess) is that PS 7 was a carbonized version of PS 7 for Mac's OS 9 version and not all the unix functions are properly translated.
