It would probably work, but the curves would need tweaking.

Depending on the printer, I might be more inclined to just mix a sepia toner
with about 15% each of MIS 7600 Y & M, with the remainder a light gray, like
the UT lightest gray.  (The light gray cuts the gamut of the toner and helps
hide the dots.)  That keeps the chemistry in the UT family, which has a
number of advantages.

One advantage of mixing your own is that there is a wide spectrum of sepia
tones.  You might as well take control of that variable so you can mix just
what you want by varying the yellow/magenta ratio.
