Of course I answered my own question mere moments after I posted this.

In case anyone else had the same question...all you need to do is pry the chip off the 
cartridge and replace it with a chip from an ink cartridge designed for the channel you 
want to use.  

Sorry to clog up the forum with my own question and answer.
