If you have a large format 7000, 7500, 9000, or 9500 printer and are able to
use the 7500 or 9500 driver to drive it, then the UT1 inkset (no sepia
toner) is what I recommend.  Converting a grayscale file to RGB and applying
a curve for printing is not difficult -- as long as the curves are already
written.  

I don't think the UT2 inkset is going to be easier for you on these
printers.  If you try to modify it, then things really get complex.  Unless
you are very experienced, I'd stick with an inkset and workflow that have
been made for each other and well tested -- like the UT1 and 7500 (7000
driver) curves for the above printers.
